Kwanzaa Vegetables
This African vegetable dish is a great addition to any holiday feast. Sweet potatoes, a staple of African cuisine, are also loaded with health-boosting vitamin A.
2 Tbsp (30 mL) extra virgin olive oil
1 clove garlic, diced
1/2 cup (125 mL) diced onion
1 tomato, diced
3 cups (750 mL) peeled and diced sweet potatoes
1/2 cup (125 mL) raisins
2 pinches ground cinnamon
1 pinch chili flakes
1/2 cup (125 mL) vegetable stock
1/2 cup (125 mL) canned chickpeas, drained and rinsed
2 Tbsp (30 mL) lemon juice
Salt and pepper to taste
In a medium sauté pan over medium heat, add olive oil, garlic and onions, and sauté until onions are translucent. Add tomatoes, sweet potatoes, raisins, cinnamon, chili flakes and vegetable stock. Cover, reduce heat to low and cook until potatoes soften, about 15 minutes. Add chickpeas and lemon juice, and stir to combine. Season to taste.
Serves eight as a side dish.
