Plum Cardamom Compote
Delicious warm, or very cold on a hot day, this compote is light—we’ve kept calories low—and so simple. The cardamom gives it an exotic, almost peppery taste without being overpowering.
1/2 cup (125 mL) water
2/3 cup (150 mL) sugar
1 tsp (5 mL) pure vanilla extract
1/2 tsp (2 mL) ground cardamom
8 large black, purple and/or yellow plums, pitted and cut into eight slices each
Serving tip: Serve warm with toast for breakfast, chilled as a snack, or along with some dark chocolate for dessert. It also makes a flavourful accompaniment to chicken, turkey or fish.
In a medium saucepan, combine water and sugar, and heat, stirring until sugar dissolves. Stir in vanilla and cardamom, then plums, and simmer gently for 10 to 15 minutes, or until liquid turns purple and becomes syrupy but plums are still firm. Will keep in refrigerator for up to five days.
