Cover cookie sheet with parchment paper; set aside.
Place chopped nuts in a bowl with remaining ingredients and mix well.
Spread mixture onto cookie sheet; bake for 10 minutes.
Remove from oven (it will look like a big cookie) and allow granola to cool for 10 minutes before breaking into chunks.
Once thoroughly cooled, store power up granola in airtight container in cool dry place for up to three weeks. Can measure 1/4 cup servings into small plastic bags for on-the-go eating.
