Potatoes are not the bad guy! They are full of vitamin C, plus other vitamins and minerals, and fibre, especially with the skin on. And when they’re cooked in their own steam (and a little olive oil), even better. So, here’s a quick & easy go-to grill supper for summer weeknights. It’s a great meal all on its own but can be a side for those at the table who love a pork chop or chicken thighs alongside.

Take a large piece of aluminum foil. Drizzle foil with a little olive oil. Place raw potato slices, skin on, in one layer. Add sliced onions, then throw on some fresh herbs (thyme is great) and a little salt and pepper to taste. Layer on whatever other vegetables you have’broccoli and carrots are excellent choices, as is zucchini. Add another layer of potatoes, and repeat as above. Finish with a layer of potatoes. Cover in foil and seal tightly on all four sides. Grill on medium heat, lid closed, for about 15 minutes. Carefully flip package and cook another 10 minutes or so. Voila, dinner!
