I often make up a double batch and then freeze the extra pancakes for a quick and delicious breakfast on busy days; just pop them into the toaster or microwave to heat them up quickly.

Goat Cheese and Spinach Frittata

This dish can be made early the day of your get-together and then covered with foil and kept warm in the oven before serving. If you’re not a fan of goat cheese, a great alternative is to use sharp cheddar scattered overtop. This frittata is full of veggies, but you can be creative and add any of your favourites as well.
