Meatless Monday: Taco Salad

I was craving a big pile of nachos in a big way today, but an entire plate of chips isn’t exactly the healthiest thing to eat. Instead, I opted to make a taco salad, with a base of romaine lettuce and just a few nachos on top to satisfy my craving.

It definitely worked – thanks to the fact that it had all the elements of nachos that I love: Guacamole, salsa and crunchy goodness.

It didn’t hurt that the avocado I used was just perfect – don’t you love it when you cut open and avocado and it’s perfectly ripe and ready to eat? It kind of made my day.

Ingredients

1 large handful of romance lettuce, chopped
1 large scoop of guacamole (mash a ripe avocado with salt, pepper, chill powder and a bit of garlic and onion)
1/4 cup fresh tomato, chopped (or a few grape tomatoes)
Scoop of corn salsa (I really think the corn adds a little something)
Nachos and chopped walnuts or pecans (to top it off)
Hemp seeds (for extra protein)
You can also add some sour cream if you’d like, but personally I find the guacamole creamy enough!

Assemble your ingredients in a bowl, starting with the lettuce – enjoy!
