On hot summer days, I crave simple, fresh meals – the more veggies, the better.

With my wedding only two weeks away, I’m also in the habit of making easy meals. Lately, I’ve just been grilling, baking, or sautéing some veggies, sprinkling them with salt and pepper and eating them with a side of rice, quinoa or millet for dinner. It’s easy, it’s yummy and it’s healthy!

Ingredients

2 large carrots, chopped
1/2 bunch asparagus, snapped and chopped
1 zucchini, chopped
Juice of half a lemon
Salt and pepper
1/2 cup uncooked rice
1.5 cups veggies broth

In a pot, bring vegetable broth to a boil. Add rice, turn down heat, and cook for 30 minutes or until ready.

On a grill or in a pan, heat olive oil and cook veggies. I like to char them a little if using a grill.

Serve rice with veggies and enjoy!
