Ingredients

olive oil

cloves garlic
minced

white onions
chopped

quinoa
rinsed well

tomato juice
fresh or canned

fresh tomatoes
chopped

corn niblets
fresh or frozen

tsp
cayenne pepper

tsp
cumin

cup
chipotle purée
(found in Mexican food sections of most grocery stores)
Salt and pepper
to taste
cheddar cheese
shredded, to sprinkle on top
Instructions
Over medium-high heat, sauté garlic and onions in olive oil until softened, about 3 to 5 minutes.
Add quinoa and cook until it starts to make a crackling sound, about 5 minutes more.
Add rest of ingredients except cheese, and stir together until well mixed.
Reduce heat and simmer uncovered for about 20 minutes. Sprinkle cheese overtop and serve hot.
