onions
chopped

canned tomatoes
pureed

pitted black olives
chopped

parsley
chopped
Salt and freshly ground pepper
to taste
Instructions
Heat oil in a skillet over medium heat. Add bacon and onions and sauté until bacon is slightly crisped, about 4 minutes. Add tomatoes and bring to a boil.
Turn heat back to medium and simmer for 5 minutes or until slightly thickened.
Stir in olives and parsley. Season Mediterranean salsa with salt and pepper.
Serve with Mustard Crumb Crust Fried Chicken and Corn and Pepper Fritters.
