  1. Slice watermelon into triangles and dry. Cut chocolate chips in half for “seeds” and push into sides of the melon. Place slices in single layer on rimmed tray and freeze for 10 minutes.
  2. Remove watermelon from freezer, top with ice cream and sprinkle with pistachios, if desired. Serve immediately. Alternately, freeze for up to 30 minutes.
