extra virgin olive oil

red wine vinegar or lemon juice

Dijon or whole-grain mustard

tsp
honey
or pinch of sugar
Freshly ground black pepper
Instructions
Put all the ingredients in a screw-top jar, put on the lid and shake. This will keep well in the refrigerator to be used when required.
Add crushed garlic, finely chopped ginger or chopped fresh herbs, if you like. Shake well before using.
