In a medium saucepan, combine water and sugar, and heat, stirring until sugar dissolves.
Stir in vanilla and cardamom, then plums, and simmer gently for 10 to 15 minutes, or until liquid turns purple and becomes syrupy but plums are still firm. Will keep in refrigerator for up to five days.
