Creamy Sweet Potato Soup
Instructions
  1. Heat oil in a pot over medium heat. Add onions and sauté for 2 minutes or until beginning to soften. Add carrots and sweet potato and sauté for 5 minutes more.
  2. Cover, turn heat to low and simmer for 18 to 20 minutes or until vegetables are very soft.
  3. Puree with an immersion blender, food processor or in a blender until smooth.
  4. Season with salt and pepper to taste and stir in lemon juice and coriander.
Recipe Notes

To make the soup spicier, add some red chili flakes. For an extra hit of protein, add 1/4 cup of red lentils to the chicken stock.
