Nobody, including me, wants to put much effort into making dinner on Mondays, Here is a solution:
Take 4 whole-wheat pitas, and put them in the toaster oven 2 at a time. (If you don’t have a toaster oven, the regular oven is fine at a temperature of about 400 degrees F.) Toast lightly and remove; cover each with fresh sliced tomatoes (I used both yellow and red tomatoes). Sprinkle on fresh herbs, such as chopped rosemary and basil, and add whatever vegetables you have on hand. I used fava beans (yes, fava beans on pizza’they work!) and shiitake mushrooms. Top with whatever cheese you have handy’I used crumbled goat’s cheese on 2 pizzas, and fresh mozzarella on the others’and put them back in the toaster oven. Toast until the cheese is melty.
