Salads are a go-to, but they get boring fast. What’s your secret for keeping them fun?
People get stuck on the idea that salads have to be entirely vegetable-based. I love mixing things up and adding in fruit, nuts, seeds and even fresh herbs. Check to see what’s in season at your grocery store and use that as a guide for building your salads.

What should people keep in mind nutrition-wise when turning a salad into a meal?
Vegetables need fat for our bodies to absorb their nutrients, so don’t skimp on them! I love adding avocado because it’s a great source of cholesterol-lowering monounsaturated fats, as well as potassium and fibre. Toss your salad with a lean meat or a plant-based protein, such as beans or lentils, to up the protein content and give your salad a bit more staying power. The last thing you want is to be running back to the kitchen an hour after you eat.

What’s your favourite salad?
I love mixing a variety of fresh and grilled veggies with fruit. Try grilling kale and avocado and toss them with fresh peaches and a light, citrusy vinaigrette. Top them with toasted nuts and you’ve got yourself a full meal. It’s my go-to throughout the summer.
