Upside-Down Pear Pudding
This comforting pear pudding is perfect for a Sunday lunch on a chilly day. Pears and blackberries are topped with an orange-scented sponge mixture and baked, then the pudding is turned out upside-down, so the luscious fruit is on top.
Delicious warm, or very cold on a hot day, this compote is light’we’ve kept calories low’and so simple. The cardamom gives it an exotic, almost peppery taste without being overpowering.

To this one, we’ve added blueberries to the stone-fruit base, and bumped up the nutritional benefits of the dumpling topping with oats and whole-wheat flour.
