Turkey-Feta Mini Loaves

These tasty loaves are ready to eat in 30 minutes or less

Instructions
  1. Preheat oven to 400ºF.
  2. In a bowl, stir egg whites with a splash of water and the oregano. Stir in oats, feta and green onions. Mix in turkey. With wet hands, divide into 8 portions; press into 8 greased cups in a muffin pan, flattening tops.
  3. In a food processor, blend red peppers with vinegar and honey; spread a little on each 'loaf.'
  4. Bake until instant-read thermometer inserted into centres is at 160ºF, about 15 minutes.
  5. Meanwhile, in a skillet, heat oil over medium-high; sauté garlic until light golden, about 10 seconds. Stir in spinach until wilted, 2 to 3 minutes. Divide among 4 plates, and top each with 2 loaves and remaining red-pepper sauce.
