Iced Tea Cocktails – With Mocktail Options

Just today is occasion enough to enjoy these iced tea cocktails, developed by Figo restaurant’s head bartender Brad Gubbins.

Ingredients
  • Ginger Collins Iced Tea
  • 10 oz lemon & ginger tea Brewed from 4 teabags. Steep for a bit longer than you would for a cup of tea, to make sure the flavour stands out, about 10 minutes. Try Teapigs Lemon & Ginger Tea.
  • 5 oz elderflower liqueur Try St. Germain.
  • 1 1/4 oz herbal liqueur Try Benedictine D.O.M. (Or omit and add 1 oz. more simple syrup instead. To make, just heat equal parts sugar and water in a saucepan over medium heat until sugar dissolves.)
  • 2 1/2 oz lemon juice
  • Soda water As desired.

  • 12 oz fruit tea Brewed from 4 teabags. Steep for a bit longer than you would for a cup of tea to make sure the flavour stands out, about 15 minutes. Try Teapigs Super Fruit Herbal Tea.
  • 2 oz lemon juice Fresh.
  • 3 1/2 oz vodka Try Ketel One.
  • 3 1/2 oz peach liqueur Try Peche de Vigne or Peach Schnapps.

  • 4 leaves sage Fresh.

  • 5 oz apple juice
  • 2 1/2 oz lemon juice Fresh.

Ginger Collins Iced Tea
  1. Add all ingredients, except the soda water, into a pitcher filled with ice. Add garnish and stir until all ingredients are mixed. Top with ice and soda water. Pour into four Collins glasses to serve.
Super Fruit Punch Iced Tea
  1. In a pitcher filled with crushed ice, add all of the ingredients and stir. To serve, pour into four Collins glasses and garnish with a half strawberry and a sage leaf.
Marrakesh Mocktail
  1. Add all the ingredients, except the soda water, into an ice-filled pitcher. Add garnish and stir until all ingredients are mixed. Top with ice and soda water. Pour into four Collins glasses to serve.
