Tomato-Roasted Mackerel

Tired of salmon? Mackerel is also a good source of omega-3 fatty acids.

Ingredients

500 g mackerel fillets
25 mL low-fat mayonnaise
1/4 cup basil leaves
2 large tomatoes, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions
  1. Preheat the oven to 400˚F. Place the mackerel on a baking sheet and spread with mayonnaise. Layer the basil and tomatoes on top of each fillet and sprinkle with salt and pepper. Roast until the fish is just opaque, 5 to 10 minutes depending on thickness.
Preparation time: 5 minutes
Cooking time: 10 minutes
