Snow Peas with Apples and Ginger
Slices of firm apple, briefly stir-fried, have the same crunch as water chestnuts, so they partner well with crisp, fresh snow peas and spicy ginger.
2 tablespoons finely peeled, slivered fresh ginger
3 cloves garlic, finely chopped
500 g snow peas, strings removed
2 crisp red-skinned apples, unpeeled, cut into thin wedges
- Heat the oil in a large nonstick frying pan over low heat. Add the ginger and garlic and cook until tender, about 2 minutes.
- Add the snow peas and apples to the frying pan and cook, stirring frequently, until the peas are crisp-tender, about 7 minutes. Serve.
Snow peas with apples and ginger variations: For an unusual main-dish salad, fold the cooled snow pea and apple combination into a big bowl of slightly chilled cooked rice along with cubes of cooked chicken breast or pork fillet.
