Smoked Trout Spread
We made our own mayonnaise for this smoked trout spread using local oil, but you could use yogurt instead.
1 stalk celery, finely chopped
2 tbsp (25 mL) chopped fresh chives
2 tbsp (25 mL) chopped fresh dill
1⁄2 cup (125 mL) mayonnaise or yogurt, approximately
Salt to taste
Apple cider vinegar to taste
Sprigs fresh dill or chives for garnish
2. Serve smoked trout spread garnished with fresh dill.
Makes about 1 1⁄2 cups (375 mL)
