Mocha Ricotta Tiramisu
This delectable version of tiramisu, the popular Italian dessert, includes the traditional lady fingers cookies soaked in coffee and liqueur. A creamy mixture of sweetened ricotta and yogurt is sprinkled with grated dark chocolate to make this elegant mocha ricotta tiramisu.
8 lady fingers cookies, about 70 g in total
1 teaspoon espresso instant coffee
1⁄2 cup boiling water
2 tablespoons coffee liqueur or brandy
1 teaspoon caster (superfine) sugar
200 g reduced-fat ricotta cheese
200 g Greek-style* yogurt
4 tablespoons icing sugar, sifted
1 teaspoon vanilla extract
30 g good-quality dark chocolate (at least 70% cocoa solids), grated, to decorate
*If you can’t find Greek-style yogurt, make your own by straining plain whole-milk yogurt through cheese cloth to remove the excess moisture.
- Break each of the lady fingers into 3 pieces, then divide evenly among four 250 ml (1 cup) glass tumblers or dessert glasses.
- Place the coffee in a measuring cup and add the boiling water. Add the liqueur or brandy and caster sugar, and stir to dissolve. Pour evenly over the lady fingers. Leave to soak while you make the topping.
- Place the ricotta, yogurt, icing sugar and vanilla extract in a bowl and beat with an electric mixer until smooth and creamy. Pile on top of the soaked lady fingers.
- Sprinkle the top of each mocha ricotta tiramisu with grated chocolate. Cover and chill for at least 30 minutes (but no more than 3–4 hours) before serving.

Ricotta cheese is much lower in fat and calories than creamy mascarpone, which is traditionally used in this dessert. Adding Greek-style yogurt to the ricotta provides creaminess without loading the fat content.
