Jamaican Jerk Paste
The first step to a stellar Jamaican jerk chicken—it's all in the paste.
1 large cloves garlic, minced
4 green onions chopped
1 small onion, diced
1/2 tbsp thyme leaves
1/2 tbsp brown sugar
1/2 tsp ground allspice
1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp salt
1/2 tsp ground cloves
1/4 tsp whole black peppercorns
2 Tbsp dark soy sauce
2 Tbsp cider or red wine vinegar
Put all Jamaican jerk paste ingredients in a food processor and blend for 2-3 minutes.
Yields about 1 cup.
