Yogurt and Pesto Salmon
Spice up simple baked salmon fillets with a garlicky pesto yogurt marinade.
Ingredients
750 g (1 1/2 lb) salmon fillets or steaks
Marinade
250 mL (1 cup) plain yogurt
30 mL (2 tbsp) Sicilian Alfredo pesto
30 mL (2 tbsp) lemon juice
3 French shallots, chopped
1 clove of garlic, crushed
Salt and pepper
Sicilian Alfredo pesto is sold in gourmet food shops. You can substitute with the same amount of store-bought dried tomato pesto or basil. You can also create appetizers by placing the salmon on pieces of previously grilled bread, topped with a dash of olive oil. Garnish with a small amount of the previously set aside marinade.
In a bowl, combine all the marinade ingredients. Set aside.
Place the salmon fillets or steaks in an oven-ready dish. Add the marinade. Mix well. If time permits, cover with plastic wrap and refrigerate for a few hours (optional).
Cover with aluminium foil and bake at 190 °C (375 °F) for about 20 to 25 minutes.
Remove from the oven and serve with a salad and stewed vegetables.
