Vinaigrette Salad Dressing
1⁄2 cup extra virgin olive oil
2 tablespoons red wine vinegar or lemon juice
1 teaspoon Dijon or whole-grain mustard
1⁄2 teaspoon honey or pinch of sugar
Freshly ground black pepper
Put all the ingredients in a screw-top jar, put on the lid and shake. This will keep well in the refrigerator to be used when required. Add crushed garlic, finely chopped ginger or chopped fresh herbs, if you like. Shake well before using.
Makes about 2⁄3 cup (150 ml)
