Turkey Burgers with Sweet Potato "Fries"
Oven-baked sweet potato fries make a tasty (and healthy) accompaniment to homemade turkey burgers.
3 large sweet potatoes (unpeeled), cut into 1/2-in. (1 cm)-wide strips
4
egg whites (I use the boxed ones)
1/4 tsp (1 mL) Tex-Mex spice

g ground turkey
6 whole-grain
hamburger buns

avocado, sliced

I’m always on the lookout for healthy meals that double as comfort food. Nothing’s better than feeling like you’re cheating on your eating plan when you’re not! This weekly go-to meal also works for casual family get-togethers (I just make more). The egg white on the sweet potato fries (which are actually baked) adds crispiness without a lot of fat, making them so good.

Preheat oven to 400°F. Put potato strips, two egg whites and a pinch of Tex-Mex spice in a container with a lid. Shake to coat strips. Lightly spray a cookie sheet with oil, and spread the strips in a single layer. Bake for 30 minutes, or until browned and crispy.
Meanwhile, in a medium bowl, mix turkey plus remaining egg whites and Tex-Mex spice. Make into six patties. Spray a saucepan with oil and place on medium heat. Cook burgers for about six minutes, until brown on the bottom. Flip, and cook for another six minutes, or until done.
Place each patty on a bun and top with avocado slices and salsa, if desired. Serve with a side of fries.
