Thai Vibe
This Thai-inspired noodle salad contains kelp noodles which are easily available at your local health stores. Kelp is a seaweed that's high in minerals and vitamins, and balances the body’s pH levels, amongst other benefits. Superfood Maca will give you fuel for the day. This sauce can be used on pasta or rice, too
Mixed Vegetables:
½ package of enoki mushrooms (picked apart)
1 bunch of dandelion greens (chiffonade)
1 red pepper (julienne)
1 red onion (julienne)
1 bunch of cilantro (lightly chopped)
Sauce:
1 cup of almond butter
2 tbsp chopped ginger
5 cloves of garlic
½ red onions
1½ red peppers
2 small carrots
1½ Thai chillies or (jalapenos)
¼ cup of rice vinegar
½ cup of lime juice
2 tbsp of agave nectar
1 tbsp of Maca
Celtic sea salt to taste
Blend all ingredients for the sauce together until smooth.
In a bowl add garnish of mixed vegetables, with 1 bag of kelp noodles. Add sauce and serve. Top with sunflower sprouts or almonds.
Makes 2-4 servings.
