Sue Mah's Pasta Salad
1 cup (250 mL) whole-wheat pasta
1/2 cup (125 mL) broccoli florets
1/2 cup diced red pepper
75 g grilled skinless chicken
1 Tbsp (15 mL) low-calorie Italian salad dressing
Boil pasta according to package directions.
Meanwhile, grill skinless chicken breasts and chop into bite-size pieces.
Drain pasta and rinse with cold water. Place in fridge until pasta cools.
When pasta is cool, combine with chicken, peppers and broccoli. Toss with salad dressing and serve.
