Rhubarb Lassi
A lassi is a yogurt-based drink from India that is served either salty or sweet. Mango is a standard sweet-lassi ingredient, but we've come up with a version that takes advantage of all the seasonal rhubarb. (If you find it too tart, up the honey.) It's pretty enough to serve for dessert, and also makes a perfect snack or breakfast smoothie.
4 rhubarb stalks, chopped
2 Tbsp (30 mL) orange juice
1/2 tsp (2 mL) honey
3/4 cup (175 mL) plain low-fat yogurt
6 ice cubes
Splash of cold water
Microwave rhubarb (covered) until soft. Chill. Blend with remaining ingredients until smooth.
Serves two.
Per serving: 92 calories, 6 g protein, 2 g fat, (1 g saturated fat), 14 g carbohydrates, 2 g fibre, 6 mg cholesterol, 69 mg sodium
