Mediterranean Meatloaf
The combination of flavours like red pepper, feta and olives in this recipe will change your view of meatloaf. Ground turkey is leaner than ground beef as well as being a good source of protein
2 Tbsp (30 mL) extra-virgin olive oil
1/4 cup (60 mL) finely diced red pepper
1/4 cup (60 mL) finely diced red onion
1/4 cup (60 mL) kalamata olives, pitted and finely diced
500 g extra-lean ground turkey
2 Tbsp (30 mL) finely diced fresh parsley
2 Tbsp (30 mL) finely diced basil
1 egg white
1/4 cup (60 mL) bread crumbs
1/4 cup (60 mL) crumbled feta cheese
Pepper to taste
Serve this healthy meatloaf with steamed vegetables, brown rice or a fresh Greek salad of tomatoes, peppers, cucumbers and red onions.
- Preheat oven to 375°F.
- In a medium-sized sauté pan over medium heat, add olive oil, red peppers, red onion and kalamata olives, and sauté until onions have softened.
- Place mixture in a medium-sized bowl and add ground turkey, parsley, basil, egg white, bread crumbs, feta cheese and a pinch of pepper. Fold together to combine ingredients.
- Transfer to a 4x8-in. (1.5 L) rectangular baking dish and press down to fill dish evenly.
- Bake for 40 minutes
Serves four.
