Baked Salmon with Maple Syrup

Registered dietitian, Sue Mah, shares one of her favourite family dinner recipes which appears in the new Dietitian’s of Canada cookbook Cook!

Ingredients

2 Tbsp (30 mL) packed brown sugar       
2 Tbsp (30 mL) pure maple syrup           
1 Tbsp (15 mL) reduced-sodium soy sauce       
4 pieces (total 500 g) skinless salmon fillet            
2 tsp (10 mL) sliced almonds, toasted

Directions
  1. Preheat oven to 375C.
  2. In a small bowl, combine brown sugar, maple syrup and soy sauce, and set aside.
  3. Lightly grease a rimmed baking sheet or line it with parchment paper.
  4. Place salmon fillets on baking sheet and bake in preheated oven for 10 minutes.
  5. Remove from oven and drizzle evenly with maple syrup sauce.
  6. Bake for two to three minutes or until fish flakes easily when tested with a fork.
  7. Sprinkle with almonds and serve.

Makes 4 servings.
