Aromatic Chicken

This is a quick, flavourful and versatile method for preparing chicken breasts.

Ingredients

3 Tbsp (45 mL) butter
2 chicken breasts (about 1 lb/500 g total), cut into strips
1 1/2 tsp (7 mL) cumin
1 1/2 tsp (7 mL) turmeric
1/2 
tsp (2 mL) hot 
pepper flakes
4 
cloves garlic, finely chopped
1 
cup (250 mL) low-sodium chicken broth
1 
cup (250 mL) low-fat sour cream
1 Tbsp (15 mL) fresh parsley, finely chopped

Directions

Melt butter in a large frying pan over medium-high heat. Add chicken strips and cook until well-browned, about 3 to 4 minutes. Add cumin, turmeric, hot pepper flakes and garlic. Cook for about 3 minutes, stirring frequently. Add chicken broth and bring to a boil, then reduce heat to medium. Cook for about 10 minutes, stirring occasionally. Slowly add sour cream and simmer for another 4 minutes, or until chicken is thoroughly cooked. Garnish with fresh parsley, and serve with your favourite side dishes.

This is such a flavourful dish. I did not have sour cream the first time I tried it so I used tzatziki instead.... everybody raved about it. The next time I tried with sour cream but it did not give it the same punch. I've gone back to the tzatziki as the flavour is that much more intense. I thought there was a lot of sauce the first time but there isn't a drop of sauce left by the time we are through dinner.
