Antioxidant Chicken Salad
This simple chicken salad makes a great meal that's packed with antioxidants and other healthy nutrients
3 cups (750 mL) baby spinach
4 ounces (115 g) grilled chicken, thinly sliced on the diagonal
2-3 thin slices red onion
1/2 cup (125 mL) raspberries or blueberries
1 cup (250 mL) strawberry halves
1 tablespoon (15 mL) balsamic vinegar and olive oil dressing
1/8 avocado, peeled and sliced
Combine the spinach, chicken, onion, raspberries or blueberries and strawberries in a salad bowl. Top with salad dressing and avocado.
