Amanda's Ginger Yam Mash
Grated fresh ginger adds warmth and depth of flavour to classic mashed yams.
2 large yams (approximately 2 lb), peeled and cut into chunks
2 tbsp non-hydrogenated margarine
1 tbsp grated fresh ginger
1 tbsp olive oil
Salt and freshly ground pepper
2 tbsp chopped cilantro (optional)
Bring a large pot of water to a boil. Place yams in water and cook until tender, approximately 20 minutes. Drain yams and set aside.
Using same pot, melt margarine over medium-low heat. Add ginger and cook until softened, 5 to 10 minutes. Return yams to pan, add olive oil and mash until soft. Mix thoroughly, add salt and pepper to taste and sprinkle with fresh cilantro (if using) to serve.
Yield: Serves 4 to 5
