Almond Salsa Verde
Serve this fresh-tasting almond salsa with the Salmon Skewers or use it to top your favourite grilled fish or meat
1/2 (125 mL) cup whole natural almonds
1 1/2 (375 mL) cup fresh chopped flat leaf parsley
2 tablespoons (30 mL) fresh chives, chopped
1/2 teaspoon (2 mL) fresh thyme, chopped
1/2 teaspoon (2 mL) each fresh oregano, chopped
3 tablespoon (45 mL) capers, chopped
1 shallot, minced
1 teaspoon (5 mL) lemon zest
1 clove garlic, minced
3 tablespoons (45 mL) lemon juice
1/2 cup (125 mL) extra-virgin olive oil
Salt and pepper to taste
In a mixing bowl, combine all ingredients (this can be made several hours in advance). Makes 2 cups (500 mL). Use to top Salmon Skewers or your own favourite dish.
