Peaches: To cook or just to eat?

Fruit is my favourite food, without question. Dessert is probably my second, and I'm always a fan of fruit desserts. But at home in the summer, despite clipping piles of recipes for pies and cakes and whatnot using seasonal fruit, I usually end up just eating it all fresh (like the five—yes, five—peaches I had for a snack last night). What can I say? They were ready to eat—in my opinion, a peach is only good if you have to eat it over the sink.

I feel like this is wrong—like I should be cooking up crumbles and galettes for dessert every night to take advantage of the cheap and plentiful Ontario peaches available everywhere right now.

I'm inspired by some of the recipes on our site, like Peach and Berry Cobbler (peaches and raspberries is a classic combination), or a Mango, Peach and Apricot Fizz, made using fresh fruit and ginger ale (although I think I'd substitute mineral water to cut down on sugar and let the fruit flavour take centre stage).

But I think what I'll make first is a Banana and Peach Smoothie. I'll make it with fresh peaches instead of canned, and fresh mint from my garden, and with a bit of protein powder it'll be a perfect post-climbing snack tonight.

What do you think? Do you like to create desserts with peaches, or are they better eaten fresh, dripping down your chin?

Had to share my fave super-nutrient-charged peach smoothie recipe: 1/2 c orange juice, 1/2 c carrot juice, 2 ripe peaches chopped and 1-2 tsp. white grape juice concentrate. Toss in a couple of tbsp. of ground flax seed for an Omega 3 boost and blend until smooth. Makes a great snack, and even better start to the day! P.S. Don't fear the carrot juice. You won't even taste it.
