I couldn't find out exactly when Julia Child said, "Everything in moderation. Including moderation." But, I did find this piece of information which I think is just great! "Child credits her longevity to good genes and a habit begun in her 40s of eating everything in moderation. But she often has said the secret to a long life is red meat and gin." Everything in moderation has been my golden rule. I believe it was also Julia's. She's been quoted as saying "Everything in moderation, including moderation." [http://www.qotd.org/search/search.html?aid=3986]
I love that sentiment. (Though I can't seem to find the direct source for this quote. Any ideas about where/when Julia said this?)
As a professional chef, the idea of using ingredients such as butter and duck fat definitely don't phase me. Although they may be high in calories and fat, at least they are completely natural. I truly believe that the chemically enhanced, over processed foods are the ones people should steer away from consuming. Everything in moderation.
I'm not in the least concerened about the suggested ingredients! It's high time people stopped worrying about what we eat. Don't eat this...don't do that... yada, yada, yada. I suppose I'm just sick to death of what the 'experts' say because it all seems so contradictory. If you have food allergies, then by all means, be careful of what you eat. Other than that, enjoy your food and enjoy your life! I believe that's what Julia's cooking was really all about.
