A whole grain called Cavena Nuda, developed by Agriculture Canada, is causing a lot of buzz in the food world. (Avena nuda means "naked oat" in Latin; a "C" has been added as a nod to its Canadian roots.) This whole grain looks and tastes like brown rice but is a hull-less oat that’s high in fibre, iron, potassium and protein. And it’s gluten-free.
Enjoy whole grains; they help reduce the risk of cardiovascular disease, cancer, diabetes and obesity.
To prepare: Bring 2-1/2 cups (625 mL) of water or stock plus 1 cup (250 mL) of Cavena Nuda to a rapid boil; cook for 40 minutes. Drain and serve as you would rice.
