Veggie burgers might be one of the easiest meals to throw together. All you need to do is choose your base (lentils, beans, quinoa, etc.) then combine it in a food processor with veggies, spices and seasonings. Add some bread crumbs, form patties and cook them – easy and delicious!

These ones have black beans and rice as the base, which really holds together well. The corn provides a satisfying pop, while the celery adds some crunch. They’re delicious – and best of all, easy!

Ingredients

One can black beans (I used Eden Organic)
1/4 cup chopped onion
1 to 2 cloves garlic
1/2 cup cooked rice
1/4 cup frozen corn
3 to 4 stalks of celery, chopped
Few tablespoons of nutritional yeast
1/4 cup spelt breadcrumbs (I used Kasha)
1 tsp cumin
2 tsp chili powder
Salt and pepper (to taste)

Directions

Combine black beans with cooked rice, corn, celery, onion, garlic, cumin, chili powder, salt and pepper in a food processor or blender until combined  but not pureed.

Add breadcrumbs and nutritional yeast and stir to combine.

Heat olive oil in pan on medium to high heat. Form patties and cook for 5 minutes on each side, or until lightly browned and crispy.

I topped mine with hummus and paired it with a side salad and homemade salsa.
