Meatless Monday: Easy Quinoa Collard Wraps with Hummus and Beets

I’m officially in my third trimester, and along with being nervous and excited as my due date becomes more of a reality, there are also a lot of symptoms to deal with. One of them being that staying on my (swollen) feet for too long is exhausting and makes my whole body sore.

The one bonus to this is that I’ve become an expert at throwing together fast, healthy meals that don’t require a lot of work. Or standing. This collard wrap is so easy (especially if you already have a big batch of quinoa cooked and ready to eat!).

Ingredients

Two large, de-stemmed collard leaves
1 cup cooked quinoa
1/2 cup shredded beets (I used a food processor to make this fast. If you don’t have one, you can just finely slice them to save time.)
Hummus
Sprouted grain croutons
Salad dressing (I used Raw Foodz Ranch Revival, but you could also make your own or use tahini instead)

Directions

Spread your desired amount of hummus on the collard leaves. Add quinoa, beets and croutons. Drizzle with a little bit of salad dressing. Wrap it up and eat it!
