Kale is one of the healthiest foods you can eat. Luckily, it also tastes delicious. Here’s a really easy way to get some for dinner tonight!

Preheat the oven to 350 degrees. Bring a medium pot of water to a boil; add 4 diced potatoes (skins on) and boil for 5 minutes. Remove from heat, drain, and add cold water; set aside.

Meanwhile, take a bunch of kale and remove the leaves from the thick stems; shred the leaves with your hands. Put them in a large bowl and add a couple of dashes of olive oil and fresh herbs, plus salt and pepper to taste. Vigorously massage the leaves with the oil and herbs; this will soften up the kale and impart the seasonings.

Add potatoes to kale mixture and add chopped onions, finely sliced carrots and a diced sweet pepper. Place this mixture in a casserole dish and drizzle with olive oil, then top with a mixture of grated parmesan and whole-wheat bread crumbs. Bake, uncovered, for about a half-hour, or until topping is browned. Serve with lemon wedges for squeezing overtop, if desired. Enjoy!
