Amanda’s Ginger Yam Mash

Grated fresh ginger adds warmth and depth of flavour to classic mashed yams.

Instructions
  1. Bring a large pot of water to a boil. Place yams in water and cook until tender, approximately 20 minutes. Drain yams and set aside.
  2. Using same pot, melt margarine over medium-low heat. Add ginger and cook until softened, 5 to 10 minutes. Return yams to pan, add olive oil and mash until soft. Mix thoroughly, add salt and pepper to taste and sprinkle with fresh cilantro (if using) to serve.
