“Noodle soup with vegetables is a popular breakfast in many parts of the world,” says ?Finkelstein. “I love breakfast soup because it warms the soul on a cold morning. The vegetables are a great way to start the day, and the egg whites provide a protein kick. My daughters, Ella and Lucy, are adventurous and they love it, too. You can make a pot of this soup ahead of time and then heat portions in the microwave whenever you want.”

More delicious breakfast ideas

If you usually start your day with a bowl of cereal, why not shake things up a bit by adding some veggies? It might sound a bit strange, but grated beets are a sweet garnish on your morning muesli (carrots work, too!) Just a 1/2 cup (125 mL) of grated beets puts one serving of vegetables under your belt before you even leave the house.

 

Here are some other quick tricks: Toss 1/2 cup of chopped peppers in with your scrambeled eggs, add 1/2 cup of chopped tomatoes to cottage cheese, or throw some greens into your breakfast smoothie.
